As if life doesn't go fast enough,
I️ think this silly blog makes the months fall off the calendar as fast as the leaves fall off the trees in my backyard! I️ don’t play favorites, I️ procrastinate on both the leaves and my “stupid blog.”
Thanksgiving is just around the corner and I️ am already feeling stressed out that the season is going to pass me by as fast as a snow cone melts in hell. There is so much to do and for Lord's sake shame on me, I️ didn’t make my Christmas tea reservations by October 1st, so now I️ have to take the kids out of school for a day in order to not break tradition....if you’re not on top of it you get stuck with the dates and times no one else wanted.
Welcome to November! The countdown begins....have you ordered your tree, addressed your Christmas cards, made your reservations, planned your parties, made your gingerbread houses, scheduled your lights to go up on the house? Clearly my stress is self inflicted as I️ am an overachiever of holiday bliss and Christmas tradition.... I️ blame the Hallmark Channel!
Let me start over....WELCOME TO THANKSGIVING... one of the best holidays of the year. I️ say this because it is about gathering with friends and family to enjoy fabulous food, delicious treats, and hopefully a bottle or two or if necessary three of good wine. It’s a time to share memories and give thanks for who and what we have in our lives.
I️ also love to bake this time of year...pumpkin muffins, gingerbread, cookies....you name it. Pumpkin muffins have been made in my family since I️ was little and I️ can’t imagine Thanksgiving dinner without them. Thought I️ might share the recipe with you... it’s super easy and they are very yummy warm or cold with extra butter!
PUMKIN MUFFINS
2 cups Bisquick
3/4 cup sugar
3/4 cup milk
2 tsp pumpkin pie spice
3/4 cup canned pumpkin
1 beaten egg
2 tblsp cooking oil
Combine dry ingredients then add everything else. Grease muffin pan. Cook at 400 degrees for 20 minutes. Makes a dozen Tricked you didn’t I️....you all thought I️ was going to give you a recipe with chocolate in it....ha! I️ make sure to bring a beautiful tray of chocolates home from my company to enjoy....silly for me to make chocolates at home when I️ do it all day everyday at work ...right? You can also bring a beautiful hostess tray of assorted chocolates home... all you gotta do is give a call and we can make one up! Happy Thanksgiving!

Updates:
A previous version of the recipe left out the 3/4 cup of milk. Which is funny because I would accuse a friend of leaving out ingredients when we swapped recipes so hers would always taste better. Ha! I guess, there's more than one person guilty in this party.
